Changing it later
Go back to Settings, Accounts, Signatures and use the Edit signature button next to the one you want to change, then Save.
This covers Outlook in a browser, whether that is Outlook.com or the work version at outlook.office.com. Microsoft moved the setting: it is under Accounts now, not under Mail, so most of the older instructions on the web point at a screen that no longer exists.
Make one first. The generator is free, needs no account, and gives you something to paste before you open your settings.
Go back to Settings, Accounts, Signatures and use the Edit signature button next to the one you want to change, then Save.
In a new message or reply, on the Message tab select Signature, then choose the signature you want.
A signature set here does not reach the Outlook desktop app, and Microsoft says so: you have to create it in both products. If you use both, paste it twice.
Your logo and photo are fetched from the address they live at by everyone you email. If the page hosting them goes away, the images break in every signature already sent.
